Mother’s Day Apple Pancakes

I was fortunate enough to have several very strong women in my life growing up, and still do today. The amazing thing about Mother’s Day is that we are not only celebrating our biological mothers but also the women who are a motherly figure in each of our lives. That may be an aunt, a close family friend, a godmother, a grandmother or even a great-grandmother. They have shaped our lives in one way or another for the better. So this Mother’s Day, say ‘thank you’ with a brunch at home and these delicious apple pancakes.

 When I was little, my dad used to make these most weekends and I was always so excited. With a few side dishes like bacon, sausage and cheesy eggs (scrambled eggs with freshly grated cheddar cheese), it’s an easy breakfast to throw together after church or morning chores.

 Apple Pancakes

 Ingredients:

  • 4-5 large apples (I prefer an apple with a sweeter flavor for this)
  • 2-3 tablespoon butter
  • ½ cup Brown sugar
  • 2 teaspoons pumpkin pie spice (as an alternative you can use nutmeg or cinnamon)
  • 1 teaspoon salt
  • 1 tablespoon vanilla extract
  • Aunt Jemima pancake mix (I’m using Bisquick because it is what I had available. Follow the ingredients on the back of the box)
  • 1 cup milk
  • 2 eggs

* You may need to increase the amount of brown sugar and butter as you want it to create a sauce.

 

Directions:
  • Preheat the oven to 375F.
  • Peel and core the apples. Then slice as you would for an apple pie.
  • Place the sliced apples in an oven proof frying pan (preferably non-stick) with the butter, brown sugar, pumpkin pie spice and salt.
  • Once the apples have begun to soften, add in the vanilla extract.
  • Follow the instruction for the batter mix and mix in a mixing bowl.
  • After the apples have become soft, pour the batter over the top carefully.
  • Place the entire skillet in the oven for 30 minutes or until the batter has fully cooked.
  •  Check with a toothpick in the center.
  •  After removing the skillet, place a large dinner plate facing the skillet and carefully flip the contents onto the plate. The apple mixture will now be on top, facing out.
  • For the first time in three years I will be home with my mom to celebrate Mother’s Day and I couldn’t be happier. With this simple breakfast recipe, I hope that all the mothers reading this have a very special and heartwarming Mother’s Day!
