Cooking With Kimes: National Oreo Day

Today is National Oreo Day and we are baking something easy and fun! Oreo stuffed chocolate chip cookies. These cookies are always a hit! They are large, decadent, and end up being a fun surprise!

   

 

Oreo Chip Cookies

Ingredients:

2 sticks of butter - softened

1 cup of brown sugar

1 cup of granulated sugar

2 eggs - room temperature

1 tablespoon of vanilla

3 1/2 cups of flour

1 teaspoon of salt

1 teaspoon of baking soda

1 package of Oreos - Double Stuf’

1 package of semi sweet chocolate chips

Directions:

Start by creaming together the butter and sugars for about 2 minutes until light and fluffy. Add eggs in one at a time mixing for a minute between, then add vanilla.

In a small bowl, whisk together the flour, salt, and baking soda. Then slowly add to wet ingredients until just combined.

 

Gently fold in chocolate chips.

Using an ice cream scoop or spoon, scoop dough into your palms and press down flat. Place Oreo in the middle and fold cookie dough up around the sides to fully enclose. Roll it around to make sure it’s fully sealed, and place on parchment lined cookie sheet, or a baking mat.

These are large cookies, I only bake about 6 at a time!


Bake at 350° for 12-15 minutes until the cookie is just set. Rest on cookie sheet for just a few minutes then transfer to cooling rack, and start the next batch!

Pour a tall glass of milk and enjoy this fun twist on “milks favorite cookie”.
