National Chocolate Chip Day

It’s National Chocolate Chip Day! Instead of doing a regular chocolate chip cookie recipe, I made a cinnamon chocolate chip loaf for you! Perfect for breakfast or dessert! This loaf freezes well, and is even better the second day!

 

Ingredients:

2 cups of all purpose flour

1/4 tsp. of salt

1 tsp. of baking soda

1/2 cup of mini chocolate chips

1 egg - room temp.

3/4 cup of brown sugar

1/4 cup of granulated sugar

1/3 cup of vegetable or canola oil

1 cup of buttermilk

1 1/2 tsp. of vanilla extract

Cinnamon Sugar Layer

1/3 cup of granulated sugar

1 tbsp. of cinnamon

1 tbsp. of brown sugar

 

 

 

 

Directions:

Mix together flour, baking soda, salt, and chocolate chips. Set aside.

In a separate bowl, whisk brown sugar, granulated sugar, and egg until smooth. Add in buttermilk, oil, and vanilla.

Pour wet ingredients into dry, and mix until just combined. Do not over mix, it will make your bread tough.

Preheat oven to 350° and grease a 9x5” loaf pan. Pour half of batter into pan, sprinkle a little over half of the cinnamon sugar mixture in, then the rest of the batter on top. Finish off with the remaining cinnamon sugar and some chocolate chips if wanted.

Cover loosely with foil and bake for 45-60 mins until loaf is set. Cool, and serve.
