Cooking With Kimes: Animal Crackers

It’s National Animal Cracker Day today, and what better way to celebrate than making your own! These are not your average animal crackers, they are softer and loaded with flavor. Grab these 8 easy ingredients, some cookie cutters, and let’s celebrate!

 

Ingredients:

 

3/4 cup of unsalted butter (softened to room temp.)

3/4 cup of granulated sugar

1 egg (room temp.)

2 tsp. of vanilla extract

2 1/4 cups of all-purpose flour + more for dusting while rolling out dough

1 tsp. of cinnamon (if you don’t like cinnamon-leave it out)

1/2 tsp. of baking powder

1/4 tsp. of salt

 

Cream together butter and sugar until well combined and fluffy. Add in egg and vanilla, mix well.

In a separate bowl, whisk together the flour, cinnamon, baking powder, and salt.

With mixer on low (or by hand) slowly add in dry ingredients until just combined. Do not over mix.

Divide dough in half, and roll out on parchment paper until about 1/4 inch thick. Refrigerate 2-4 hours, then cut out animals using your favorite cookie cutters.

Bake in a preheated 325° oven for about 10 minutes depending on cookie size. Cool on wire rack.

 

 I left mine plain, but you could dunk them into royal icing and top with sprinkles for a circus animal cookie feel!
